RECIPE: (Very) Rocky Road

Given how much I like to cook it was only a matter of time really before my half-arsed recipes made it onto my blog, and with restaurant reviewing currently of the window, now seems like a good time to post my first. It seems a bit cheeky to call this a recipe since it's so straightforward a chimp of above average intelligence could probably manage it. It involves no baking, very little measuring and is essentially just a load of snacks mixed together in a bowl. Perfect!



You'll need:
  • 200g of chocolate (I used a mixture of milk and dark)
  • 200g of any biscuits
  • 120g of unsalted butter
  • assorted fillings e.g. marshmallows, nuts, pretzels, cereal...whatever you can find!
  • 1 tbsp honey or golden syrup
To Make it:
  1. Generously grease and line a square tin or dish with butter and grease-proof/baking paper. Don't skip this step or you'll never get it out. 
  2. Melt the (enormous amount of) butter with the chocolate over a very low heat. Add a drizzle of honey or golden syrup to sweeten it up even more.
  3. Crush your biscuits by hand or by putting them in a sandwich bag and whacking them until some pieces are like tiny crumbs and some are still in chunks.
  4. To your biscuits add whatever sweets and chocolates your heart desires or whatever you've got in your cupboards. Marshmallows are always a good shout for this but I also added a handful of popcorn, some pink chocolate buttons, sprinkles, frosties and, as it's Easter, a handful of crushed mini eggs. (Raisins, dried cranberries and nuts are also lovely additions but I was making mine for some little'uns and thought they'd prefer it without the 'healthier' stuff).
  5. Mix your fillings into the warm, buttery chocolate mixture and then spread out evenly into your tin, pushing it down so it all sticks together.
  6. Put into the fridge for a few hours to harden and then you'll be able to ease it out and cut it into neat slices.
